Typically, when the temperature outside drops, our brain reacts to warming foods. Here, have a bowl of our luscious celery soup. Herby, fresh celery and parsley flavor contrast with hearty potatoes and luxurious cream to create a dish that is both savory and creamy. As soon as we took that first tentative spoonful, we were hooked. There is magic in this small list of ingredients.

The thing is, as elegant as braised vegetables may sound, they are just regular vegetables cooked in a different way. They are simple to prepare and low in pretension. If you were to ask me, "What is braising?" It's a cooking method in which the food is seared over high heat before being finished off in a liquid in the oven. Typically, meat is braised using this method, and sometimes vegetables are added to the pot at the same time. However, vegetables are delicious when braised on their own.

Ingredients:
  • 2 tbsp butter or olive oil
  • 1 medium onion, chopped
  • 4 clove garlic, chopped
  • 8 cup chopped celery, about 12 stalks
  • 250 g yellow potatoes, peeled and diced
  • 4 cup chicken or vegetable stock
  • 1/2 cup parsley
  • Sea salt and pepper
  • Dill and sour cream
Instructions
  1. Butter needs to be melted in a large pot over medium heat. Cook the onion for three minutes after adding it to the pan. Add garlic and cook for another minute.

  2. Bring the stock to a boil, then add the celery, potatoes, and stock to the pot. Cover the pot and simmer on low heat for 15 minutes, or until the celery and potatoes are tender.

  3. After you've added the parsley, blend the soup in a blender or with an immersion blender. Try it out, and season it with salt and pepper to your liking. Garnish with sour cream and fresh dill before serving.
